Think about environment, diet, seasonality and stress. How do you feel when stressed, or when your diet changes? What about that seasonal cold that you often get?

Apply those thoughts to a dairy cow. Milk makes up a large part of the American espresso beverage. We may think we are just in the coffee business, but have you considered that you are also in the dairy business? How much do you really know when it comes to your milk program? 

La Marzocco is taking all of these thoughts and hosting a special event.  Thirty-five year veteran to the dairy industry, Pete Ellis, owner of Pete’s Milk Delivery, will be joining us and sharing his experience of being born into the farm and dairy business, and how he currently works to educate and support the Puget Sound region with his milk delivery service. Pete has expertise in product handling, working to meet customer expectations, and an understanding of the variables that create delicious milk.

Together, with Pete, we will taste cold milk, steamed milk, and steamed milk with coffee, from three local farms:

  • Twin Brook Creamery – A large dairy processor that provides a quality product to a large customer base.
  • Lucerne – High-temperature processed, shelf-stable milk, commercially produced and distributed.
  • Pure Eire Dairy – A fully-verticalized dairy that raises cows and processes their milk. Cows are free to roam, with their calves living in a low-stress environment. Pure Eire is the first GMO-free dairy in Washington & Oregon.

Pete’s grandfather, Benjamin F. Smith, started  Smith Brothers Farm with a single cow and a dream more than 90 years ago.  Pete carries on what his grandfather began by treating everyone like family and fostering outstanding relationships with his team and partners.  The family has developed bonds with farmers in the local Auburn (WA) and Willamette (OR) Valleys; operating through sustainable and honest methods.

Sarah is the Customer Experience & Coffee Education Coordinator for La Marzocco USA. Sarah has spent many years in the coffee world with a keen focus on the umbrella “Quality” should cover.  Whether addressing environment, processes, staff, service or ingredients, it is her belief that all must be of the highest quality to get remarkable results.
